I come with a question.

How do I manually edit tracklistings with MusicBrainz?

IE: The Beatles' White Album is two discs.

I want it all in one folder

1-whatever

Instead of two discs of songs.

Like it's all on one disc, basically.

How can I do that?

with some kind of tagger script?

Well, can you tell me how to do it with MusicBrainz?

I don't need MusicBrainz doing some of the stuff for me.

well, you can't do it with MusicBrainz, as that is the central database. the best way is to use the beta version of PicardQT and read the documentation on how to configure it to use one directory for multiple disc sets
