I do this on a regular basis: by some thing that will expire within days, put it in the freezer and it's good to go for years later

it's a cheese from cow/goat milk, it's brown, and somewhat sweeter since it's been caramelised

it depends on it, some are stronger (ekte gjetost), sweeter, (gudbransdal) or milder (mysost)
