I have a book that contains all of the works of a poet
If I add this to BB will I have to create a separate work for each poem?
(It's a lot of poems)
It also contains texts about that poet written by various authors
Will I have to create a work for each extract?
Also how do I denote it's just an extract and not the whole text?

Yes to all of that.
In general, poems are individual works.
And if various authors are writing introductions, essays, or even brief missives about the author and/or his works, those are generally separate works.
