It should be pretty straightforward. when you're editing a release, you add discs in the "tracklist" tab. for each disc ("medium") you can choose a different type ("CD", "Vinyl"etc)

Problem is: when I add another release based on this one, it doesn't add all tracks. The releases are identical apart from the publishing date, cover and barcode (simple stuff, really).

barcode is 7619929117824, it's got a german and english title; seems to be the same as the "Classica d'Oro' release apart from the barcodes.
